As always, there was lots of fresh produce, yummy baked goods, homemade dog treats, maple syrup, crafts and more. We enjoyed cooking demonstrations by author Jane Snow and local food blogger Tom Noe. And we had a lot of fun (and tasty eating) at our annual recipe contest, the Zucchini Smackdown.&lt;br /&gt;&lt;br /&gt;In January, vendors will meet to make plans for the 2012 market season. We would love to hear your feedback on what we can do to make the Seville Farm Market even better. Drain and add onion. Cook until bacon is crisp and onions are browned.&lt;br /&gt;&lt;br /&gt;Whisk eggs; add flour, baking powder, salt, zucchini and cheese, and mix well. Add cooled bacon / onion mixture. Pour into a 9- by 13-inch pan that has been sprayed with cooking spray.&lt;br /&gt;&lt;br /&gt;Bake at 350 degrees for about 30 minutes or until done.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Chocolate Zucchini Muffins&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;By Terry Loyer&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Cream together:&lt;br /&gt;1/2 cup brown sugar&lt;br /&gt;1/2 cup white sugar&lt;br /&gt;2 eggs&lt;br /&gt;&lt;br /&gt;Add and beat until smooth and fluffy:&lt;br /&gt;1/2 cup softened butter&lt;br /&gt;1 cup sour cream&lt;br /&gt;&lt;br /&gt;Add and blend well:&lt;br /&gt;1 tsp. baking soda&lt;br /&gt;1 tsp. baking powder&lt;br /&gt;1/2 tsp. salt&lt;br /&gt;1 tsp. vanilla&lt;br /&gt;2 cups flour&lt;br /&gt;1/2 cup cocoa&lt;br /&gt;&lt;br /&gt;Fold in:&lt;br /&gt;2 cups grated zucchini&lt;br /&gt;&lt;br /&gt;Spoon into muffin tins, about three-fourths full. (Could also be baked in a loaf pan.) We're grateful to our judges: Seville Lions Club President Chuck Boomhower, Seville Library Branch Manager Lynn Wiandt, and Seville attorney and Cloverleaf School Board Member Joe Doty.&lt;br /&gt;&lt;br /&gt;Bragging rights for Largest Zucchini went to Carole Lintner, whose entry weighed in at 7.2 pounds. Judy Foster of Seville won in the Best Savory Dish category with her Zucchini Casserole. Market vendor and Seville resident Kris Perry earned first prize in the Best Sweet Dish category with her Zuchiniapple-Carrot Cake. &lt;br /&gt;&lt;br /&gt;The winning recipes are listed below. Thanks to all who participated.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Best Savory Dish:&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;Zucchini Casserole&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;By Judy Foster&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;2 cups French bread cut into small cubes&lt;br /&gt;1/2 tsp. salt&lt;br /&gt;1/2 tsp. garlic powder&lt;br /&gt;1/4 tsp. black pepper&lt;br /&gt;1 8-inch zucchini, cut into 1/4-inch-thick slices&lt;br /&gt;1 1/2 cups shredded sharp cheddar cheese&lt;br /&gt;1 1/2 tbs. butter&lt;br /&gt;3 slices cooked bacon&lt;br /&gt;1/2 cup red onion, diced&lt;br /&gt;&lt;br /&gt;Lightly grease a 1 1/2-quart casserole dish. Layer all ingredients. Cover with foil. Bake at 400 degrees for one hour.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Best Sweet Dish:&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;Zuchiniapple-Carrot Cake&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;By Kris Perry&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Cook 8 ounces of zucchini in pineapple juice for about 20 minutes. Drain, cool and then proceed with the recipe.&lt;br /&gt;&lt;br /&gt;2 cups flour&lt;br /&gt;2 cups sugar&lt;br /&gt;1 tsp. baking powder&lt;br /&gt;1 tsp. baking soda&lt;br /&gt;1 tsp. ground cinnamon&lt;br /&gt;3 cups finely shredded carrots&lt;br /&gt;1/2 cup coconut&lt;br /&gt;8 ounces mock pineapple (see above)&lt;br /&gt;1 cup cooking oil&lt;br /&gt;4 eggs&lt;br /&gt;Cream Cheese Frosting (recipe follows)&lt;br /&gt;&lt;br /&gt;Grease and lightly flour two 9- by 1 1/2-inch round baking pans and set aside. In a large mixing bowl, combine flour, sugar, baking powder, baking soda and cinnamon. Add carrots, oil, zucchini, coconut and eggs. Beat with an electric mixer until combined. Pour batter into the prepared pans. Bake in a 350 degree oven for 30 to 35 minutes or until a toothpick comes out clean. Cool on a wire rack for 10 minutes. Remove from pans. Cool thoroughly on wire racks. Frost with Cream Cheese Frosting. Cover and store in refrigerator. Makes 12 to 16 servings.&lt;br /&gt;&lt;br /&gt;Cream Cheese Frosting&lt;br /&gt;&lt;br /&gt;Beat 6 oz. of cream cheese with 1/2 cup butter and 2 tsp. vanilla until light and fluffy. Gradually add 2 cups sifted powdered sugar, beating well. It takes place 10 a.m., Saturday, Aug. 20, at Maria Stanhope Park in Seville.&lt;br /&gt;&lt;br /&gt;Now in its third year, the competition invites home cooks to prepare their most creative, delicious zucchini recipes and bring them to the Seville Farm Market for judging. A panel of local celebrities will choose winners in two categories: Best Savory Dish and Best Sweet Dish. A prize also will be awarded for the Largest Homegrown Zucchini!&lt;br /&gt;&lt;br /&gt;Past winning dishes have included: Zucchini Chive Whole Wheat Bread, Zucchini "Crab" Cakes, Chocolate-Coffee Zucchini Torte and Zucchini Cobbler.&lt;br /&gt;&lt;br /&gt;We invite you to join us for this homegrown contest that promotes culinary creativity and the use of fresh, local produce. Come visit us in the cool of a Saturday morning. Enjoy a cup of coffee and a fresh muffin, cookie or scone from one of our talented bakers, and stroll around the market&amp;nbsp;under the shade of the trees at Stanhope Park.&lt;br /&gt;&lt;br /&gt;We're grateful to local food writer Tom Noe for last month's terrific cooking demonstration. Tom made some delicious gnocchi right on the spot, using fresh ingredients from the market. On Aug. 13 we'll welcome cookbook author Jane Snow for a cooking demo using fresh market ingredients. Our very popular cooking contest, The Zucchini Smackdown, also takes place on Aug. 20, so start scouting those zucchini recipes now.&lt;br /&gt;&lt;br /&gt;And we know those pumpkin plants given away free to our young market visitors in early June must be growing, too! See you next year!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Blueberry Zucchini Bread&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;By Kris Perry&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;3 eggs, lightly beaten&lt;br /&gt;1 cup vegetable oil&lt;br /&gt;3 tsp. vanilla extract&lt;br /&gt;2 1/4 cups white sugar&lt;br /&gt;2 cups shredded zucchini&lt;br /&gt;3 cups all-purpose flour&lt;br /&gt;1 tsp. salt&lt;br /&gt;1 tsp. baking powder&lt;br /&gt;1/4 tsp. baking soda&lt;br /&gt;1 tbsp. ground cinnamon&lt;br /&gt;1 pint fresh blueberries&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 degrees. Lightly grease four mini-loaf pans.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;In a large bowl, beat together the eggs, oil, vanilla and sugar. Fold in the zucchini. Beat in the flour, salt, baking powder, baking soda and cinnamon. Gently fold in the blueberries. Transfer to the prepared mini-loaf pans.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Bake 50 minutes in the preheated oven or until a knife inserted in the center of a loaf comes out clean. Then add zucchini and flour. Beat well. The longer you beat it, the moister the brownies. Pour into &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;ungreased&lt;/span&gt; 11-by-15-inch pan. Bake at 350 degrees for 20-25 minutes. Beat in egg, zucchini and lemon peel. Combine flour, baking soda, baking powder, cinnamon and salt; gradually add to the creamed mixture. Stir in raisins and walnuts.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Drop by tablespoonfuls three inches apart onto lightly greased baking sheets. Bake at 375 degrees for eight to 10 minutes or until lightly browned. Remove to wire racks to cool.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;For glaze, combine sugar and enough lemon juice to achieve a thin spreading consistency. Add the sugar, cinnamon and nutmeg; simmer one minute longer. Remove from heat; set aside.&lt;br /&gt;&lt;br /&gt;For crust, combine flour and sugar in a bowl; cut in butter until the mixture resembles coarse crumbs. Stir 1/2 cup into zucchini mixture. Press half of remaining crust mixture into a greased 15-by-10-by-1 baking pan. Spread zucchini over top; crumble remaining crust mixture over zucchini. Sprinkle with cinnamon. Bake at 375 degrees for 35-40 minutes or until golden and bubbly. Mix next three ingredients and heat until very warm (120 to 130 degrees). Gradually add to first four and beat two minutes. Add zucchini, chives and 1/2 cup flour. Mix two more minutes and then stir in enough flour to make a soft dough. Turn out onto floured board and knead eight to 10 minutes. Cover dough and rest 10 minutes. Divide into three parts and roll each 12 inches long. Braid together, pinch ends, place in 9-by-5 loaf pan. Let rise till doubled and bake at 375 degrees for 25 minutes. Bake at 350 degrees for 30 minutes.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Zucchini Cinnamon-Swirl Cake&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;By The &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;Novak&lt;/span&gt; Family&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 medium zucchini (about 12 oz.)&lt;br /&gt;1/3 cup chopped walnuts&lt;br /&gt;1 tablespoon cinnamon&lt;br /&gt;1 1/2 cups brown sugar&lt;br /&gt;3 cups all-purpose flour&lt;br /&gt;2 teaspoons baking soda&lt;br /&gt;1 teaspoon baking powder&lt;br /&gt;1 teaspoon salt&lt;br /&gt;1 medium Granny Smith apple&lt;br /&gt;1 8-oz. plain nonfat yogurt&lt;br /&gt;1 container (8 oz.) refrigerated no-cholesterol egg substitute&lt;br /&gt;1/4 cup salad oil&lt;br /&gt;1 tbs. vanilla extract&lt;br /&gt;&lt;br /&gt;Shred zucchini. Place in colander, let stand 15 minutes. After 15 minutes, squeeze dry.&lt;br /&gt;&lt;br /&gt;Spray 10-inch &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;Bundt&lt;/span&gt; pan with nonstick cooking spray.&lt;br /&gt;&lt;br /&gt;In a small bowl, combine walnuts, cinnamon, and 1/4 cup packed brown sugar; set aside.&lt;br /&gt;&lt;br /&gt;In a large bowl, mix flour, baking soda, baking powder and salt.&lt;br /&gt;&lt;br /&gt;Shred unpeeled apple.&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 degrees. In medium bowl, with wire whisk, beat yogurt, egg substitute, salad oil, vanilla extract, and 1 1/4 cups brown sugar until smooth. Stir in shredded zucchini and apple until blended. Stir zucchini mixture into flour mixture just until flour is moistened.&lt;br /&gt;&lt;br /&gt;Pour half of the batter into &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;Bundt&lt;/span&gt; pan, sprinkle evenly with walnut mixture. Top with remaining batter. Bake 50 to 60 minutes until toothpick inserted in center of cake comes out clean. Cool cake in pan on wire rack for 10 minutes. In 2009, we had eight entries. So, like zucchinis themselves, the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;Smackdown&lt;/span&gt; just keeps on growing!&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Speaking of which, the winner of this year's Largest Zucchini Contest was Carole &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;Lintner&lt;/span&gt; who hauled in a 10-&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;pounder&lt;/span&gt;.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Our distinguished panel of judges for the cooking contest included Seville resident Norma &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;Detwiler&lt;/span&gt;, Seville Presbyterian Church Pastor John &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;Bassman&lt;/span&gt;, and Seville Mayor Carol Carter. That's what we say when it comes to one of the garden's most prolific vegetables: Zucchini.&lt;br /&gt;&lt;br /&gt;Do you have a great zucchini recipe? If so, cook it up and bring it to the Seville Farm Market by 10 a.m. on August 21. Our panel of judges will award prizes for the Best Savory Dish and the Best Sweet Dish.&lt;br /&gt;&lt;br /&gt;Is there a monster zucchini lurking in your garden? If so, bring it to the market! We'll present a prize to the grower of the biggest zucchini.&lt;br /&gt;&lt;br /&gt;This year's Zucchini Smackdown also will feature a cooking demonstration by Mike Vrobel of DadCooksDinner.com.&lt;br /&gt;&lt;br /&gt;Here are the rules:&lt;br /&gt;&lt;br /&gt;1.) All local producers of fruits and vegetables, jams and jellies, baked goods, crafts and more are welcome to participate.&lt;br /&gt;&lt;br /&gt;The market is held 9 a.m. to noon each Saturday at Seville's Stanhope Park at the gazebo. Opening day is May 29 and the market will run through the end of October. While processing, gradually add oil in a steady stream. Come on by and try some!&lt;br /&gt;&lt;br /&gt;The Gladdens expect to have fresh celery, brussels sprouts, eggplant, radishes -- and more Tennessee Spinning Gourds. In bygone days, these fun little gourds were a favorite of children who enjoyed spinning them like tops. They are large, heavy-duty bags -- perfect for carrying home lots of fresh produce and other goodies. Press dough onto the bottom and up the sides of plate to form a crust; seal seams. Spread with mustard.&lt;br /&gt;&lt;br /&gt;In a large skillet, saute zucchini and onion in butter until tender. In a large bowl, combine the eggs, cheeses, seasonings and zucchini mixture. Pour into crust.&lt;br /&gt;&lt;br /&gt;Bake at 375 degrees for 20 to 25 minutes or until a knife inserted near the center comes out clean. Cover edges loosely with foil if crust browns too quickly. Add remaining ingredients and mix. Spread in a jelly roll pan and bake at 350 degrees for 30 minutes. Judges evaluated each dish on the basis of its appearance, taste, originality and its "zucchininess" -- defined as the best use of zucchini, other than leaving it on the neighbor's porch.&lt;br /&gt;&lt;br /&gt;When the smackdown was over, there was one baker whose creation stood above the rest: Caitlin Keiper and her Zucchini Pie! Robin Williams placed second with her Zany Zucchini Zstreusel Cake and Karen Lucas took third with her Low-Fat Zucchini Crisp.&lt;br /&gt;&lt;br /&gt;Printed below are the recipes for the top three placers. Watch for their stories and photos in the papers.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Zucchini Pie&lt;/strong&gt;&lt;br /&gt;By Caitlin Keiper&lt;br /&gt;&lt;br /&gt;For filling:&lt;br /&gt;&lt;span style="font-size:85%;"&gt;6 cups zucchini, peeled, seeded and sliced&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 1/4 cups white sugar&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;2 tablespoons all-purpose flour&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 1/2 teaspoons ground cinnamon&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 1/2 teaspoons cream of tartar&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;2 tablespoons lemon juice&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/8 teaspoon salt&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/4 teaspoon ground nutmeg&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 tablespoon butter, diced&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 recipe pastry for a 9-inch single-crust pie&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;&lt;/span&gt;&lt;br /&gt;For streusel topping:&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/2 cup butter&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;3/4 cup flour&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;3/4 cup rolled oats&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/2 cup brown sugar&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 tablespoon cinnamon&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;Boil zucchini until tender. Drain and let stand in cold water for about 5 minutes, then drain. Add sugar, flour, cinnamon, cream of tartar, lemon juice, salt and nutmeg. Mix well. Put into pie crust. Dot with butter. Mix streusel ingredients until crumbly and spread it on top. Bake at 400 degrees for 40-50 minutes.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Zany Zucchini Zstreusel Cake&lt;/strong&gt;&lt;br /&gt;By Robin Williams&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;2 cups shredded zucchini&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/3 cup packed brown sugar&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/3 cup oats&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/3 cup raisins&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 tablespoon cinnamon&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/2 teaspoon pumpkin pie spice&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;3 cups flour&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 1/4 cup sugar&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 1/2 teaspoon baking powder&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 teaspoon baking soda&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/2 teaspoon salt&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 1/3 cup plain yogurt&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/3 cup vegetable oil&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 tablespoon vanilla&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;2 egg whites, lightly beaten&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 egg, lightly beaten&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;Cooking spray&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 tablespoon dry bread crumbs&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;3/4 cup powdered sugar, sifted&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;2 teaspoons milk&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 teaspoon vanilla&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 degrees. Blot zucchini between paper towels. Combine brown sugar and next four ingredients. Set aside.&lt;br /&gt;&lt;br /&gt;Lightly spoon flour to measure. Level with knife. Combine flour and next four ingredients in a large bowl. Mix well.&lt;br /&gt;&lt;br /&gt;Combine yogurt and next four ingredients. Add zucchini.&lt;br /&gt;&lt;br /&gt;Add wet ingredients to dry ingredients. Stir until moist.&lt;br /&gt;&lt;br /&gt;Coat bundt pan with spray and dust with bread crumbs. Spoon in 1/3 of the batter. Top with half the sugar mix. Repeat, ending with batter.&lt;br /&gt;&lt;br /&gt;Bake 1 hour. Cool in pan for 10 minutes. Remove and allow to completely cool.&lt;br /&gt;&lt;br /&gt;Mix remaining ingredients and drizzle cake with glaze.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Low-Fat Zucchini Crisp&lt;/strong&gt;&lt;br /&gt;By Karen Lucas&lt;br /&gt;&lt;br /&gt;For the filling:&lt;br /&gt;&lt;span style="font-size:85%;"&gt;8 cups peeled zucchini, thinly sliced, no seeds&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/2 cup fresh lemon juice&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;3/4 cup white sugar&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 teaspoon ground cinnamon&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/4 teaspoon ground nutmeg&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;&lt;/span&gt;&lt;br /&gt;Cook until tender, about 30 minutes.&lt;br /&gt;&lt;span style="font-size:85%;"&gt;&lt;/span&gt;&lt;br /&gt;For the crust:&lt;br /&gt;&lt;span style="font-size:85%;"&gt;2 cups flour&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/3 cup butter, cold and cut into small pieces&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 cup white sugar&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 cup uncooked oatmeal&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;Pinch of salt&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1 teaspoon ground cinnamon&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;1/3 cup buttermilk&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Combine flour and butter until crumbly. Add remaining ingredients, except for buttermilk. Mix well and sprinkle buttermilk over top of mixture, rubbing with fingers until crumbly. Pat 1 1/2 cups into 9- by-13-inch pan and bake for 10 minutes at 375 degrees.&lt;br /&gt;&lt;br /&gt;Add 1/3 cup of mixture to filling, then put the filling into the crust. Grease and flour a 9- by 13-inch pan.&lt;br /&gt;&lt;br /&gt;Cream together sugars, butter and applesauce. Add eggs, vanilla, buttermilk and zucchini. Mix well.&lt;br /&gt;&lt;br /&gt;Sift all dry ingredients together and add to first mixture. Mix well.&lt;br /&gt;&lt;br /&gt;Pour batter into prepared pan. Add squash, cover, and cook for 10 minutes, or until a fork can pierce the stem area with little resistance. Drain, and slice off the top of the squash. Use a melon baller to carefully scoop out the center of the squash. Reserve all of the bits of squash.&lt;br /&gt;&lt;br /&gt;Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Remove bacon to paper towels and set aside. Saute onion in bacon drippings. Chop the reserved squash pieces and saute them with the onion for 1 minute.&lt;br /&gt;&lt;br /&gt;Remove the skillet from heat and stir in the breadcrumbs. Crumble the bacon and stir into the stuffing along with the Parmesan cheese. Season to taste with salt and pepper. Stuff each squash to overflowing with the mixture and place them in a large baking dish. Here is a currant pie recipe. They also make awesome jelly.&lt;br /&gt;&lt;br /&gt;See you Saturday!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Fresh Currant Pie&lt;/strong&gt;&lt;br /&gt;&lt;em&gt;Just tart enough, very juicy; the filling has a gorgeous bright color.&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:arial;font-size:85%;"&gt;Pastry for 2-crust pie&lt;br /&gt;3 cups washed, stemmed currants&lt;br /&gt;1½ cups sugar&lt;br /&gt;3 tablespoons quick-cooking tapioca&lt;br /&gt;½ teaspoon salt&lt;br /&gt;1 tablespoon butter or regular margarine&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;Drain currants. Place in a bowl and crush lightly with a spoon. Combine sugar, tapioca and salt. Add to currants and stir gently to mix. Turn into pastry-lined 9” pie pan; dot with butter. Adjust top crust; flute edges and cut vents. Come to the Seville Farm Market for some fresh Swiss Chard and give it a try!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Stir-Fried Swiss Chard with Feta Cheese&lt;br /&gt;&lt;/strong&gt;&lt;br /&gt;&lt;span style="font-family:arial;font-size:85%;"&gt;2 tablespoons chopped walnuts or pine nuts, toasted&lt;br /&gt;2 tablespoons olive oil&lt;br /&gt;2 medium shallots or small onions, finely chopped&lt;br /&gt;2 bunches swiss chard rinsed well and torn in 2-inch pieces&lt;br /&gt;¼ cup crumbled feta cheese&lt;br /&gt;salt and pepper&lt;/span&gt;&lt;em&gt;&lt;br /&gt;&lt;/em&gt;&lt;br /&gt;In a wok or heavy skillet, heat oil and add shallots or onions. Fry one minute or until just beginning to brown. Add swiss chard, toss and cover. Cook two minutes. Remove cover and cook another minute. If there is any liquid, drain it off. Stir in the feta cheese. Cook 30 seconds or until it starts to melt. Add pine nuts or walnuts and season with salt and pepper. Vendors will set up in Stanhope Park and West Main Street, which will be closed to traffic during the market. Adjacent parking is available at Seville United Methodist Church, through its High Street entrance.&lt;/p&gt;&lt;p&gt;The market is open not only to professional producers in the Seville area, but also to local home gardeners who may have extra produce to sell. To encourage participation in the market’s first year, registration is free, but all vendors must register before being permitted to sell.
